“天下山峰何其多,唯有此处峰成林。”这,便是万峰林。在这美丽风景之中,隐藏着一道金灿灿的美味——蛋炒饭。这一常见的美味,遍布世界各地,但这里的蛋炒饭,则尤为不同。当地人用简单原料的巧妙搭配,在锅中汇聚成了令人垂涎的美食。
"There are so many peaks in the world, but only the peaks here look like forest." This sentence has been written to describe Wanfenglin. There is a special delicacy in the beautiful scene spot-fried rice with egg, which is considered common and popular food in the whole world. However, fried rice with egg in Wanfenglin is particularly different. With the ingenious combination of simple materials, local people create unique fried rice.
对美味的渴望,源自人类的本能。关于美食,各地又有着相同或不同的选择。土鸡蛋、小葱碎,这些与他地无二,而巧妙搭配的包谷饭、提升口感的猪油渣、西南地区特有的糟辣椒,又赋予这碗米饭独特的色彩。
The desire for delicacy comes from human instincts. Different people from different places have different choices in taste. Native eggs and green onions are widespread in different kinds of fried rice with egg, but the corn rice, appetizing lard crackling and fermented chili only exists in Guizhou can give particular flavors to fried rice with egg in Wanfenglin.
当地人的独特配方
大米中参入干玉米磨成的包谷糁与包谷面,再用木甑蒸熟,制成的包谷饭尽显金银两色。
Mix rice with corn flour and residue, steam it with a wooden basin. The corn rice made in this way will appear two colors: yellow and white.
这种包谷饭炒制之后,粒粒分明,食用后也会有更强的饱腹感。

动物油脂的巧妙运用
将猪肉炼制成猪油,是每天蛋炒饭炒制之前的准备工作。
Refining pork into lard is a necessary preparation for cooking fried rice in Wanfenglin.
动物油脂炒制食物能使得食物更加可口,而现炼的猪油使得本身较干的包谷饭更加油润。
Frying with animal oils can make food more delicious, and the fresh lard makes the dry corn rice more wet to be easy to swallow.
制油工程中产出的副产物“猪油渣“也会加入到炒制的过程中,丰富舌尖的层次。
"Lard dregs", a kind of by-product of refining process of lard will also be added to fried rice. It tastes crispy and good.
简单食材的完美融合
土鸡蛋置于碗中,筷子在碗中飞快搅动,倒入早已烧热的油锅之中,金黄的蛋液便会瞬间膨胀起来。
Break the native eggs into the bowl, stir it quickly with chopsticks, and pour the egg liquid into the hot oil, the golden egg liquid will instantly swell up.
厨师熟练地用锅铲将鸡蛋打散,加入发酵完毕的剁椒——糟辣椒。酸辣的加入,消解了炒饭多有的油腻,带来了丝丝清爽。
Chef needs spread egg liquid with a spatula rapidly, and add the fermented chili, which tastes spicy and soar. The fermented chili can neutralize the feeling of greasy in fried rice.
放入早已备好的包谷饭,大火快炒,使得食材的味道充分融合在一起。离火撒上一把翠绿的小葱碎,呈于碗中,一份看似普通却又香气扑鼻的蛋炒饭便完成了。
Finally, put corn rice into the pan, and fry all the ingredients over a big fire to mix all flavors completely. Turn off the fire and scatter chopped green onion. A bowl of fried rice with egg that looks simple but great is finished.
美味餐食的巧妙搭配
单凭蛋炒饭可能仍有些许寡淡,当地人多佐以数种凉拌小菜和鲜炸酥肉、小鱼作为配菜一起食用。
